Honey-Almond Cheesecake
Again, not for children under 1 1/2 yrs of age, because of the honey.
1/3 cup butter
1/6 cup honey
1 egg
1 1/4 cup flour
3 (8-oz) pkgs cream cheese
3/8 cup honey
3 eggs
1 cup sour cream
1 Tbs honey
1/2 tsp vanilla extract
1/2 tsp almond extract
Cream butter and 1/6 cup honey until light and fluffy. Blend in egg; add flour. Mix well. Spread dough onto bottom and 1 1/2 inches high around sides of 9-inch springform pan.
Bake at 450 degrees for 5 minutes. Combine softened cream cheese and 3/8 cup honey; mix with electric mixer until well blended. Blend in 3 eggs and pour into crust.
Bake at 450 degrees for 10 minutes. Reduce oven temperature to 300 degrees; continue baking for an additional 30 minutes.
Combine sour cream, 1 tablespoon honey and vanilla and almond extracts. Carefully spread over cheesecake. Continue baking 10 minutes. Loosen cake from rim of pan. Cool; remove rim and serve cold.
Garnish with almonds and fruit if desired.
