Lemon Clouds
1 stick butter
1 cup flour
3/4 cups walnuts, chopped
1 8-oz pkg of cream cheese, at room temp
1/2 cup sugar
1 1/2 cups Cool Whip
2 pkgs INSTANT lemon pudding
3 cups milk
Preheat oven to 400 degrees F.
Crust:
Blend together flour, butter and 1/2 of walnuts. Mix until coarse. Pat into a 9 x 13-inch baking pan and bake in oven for about 10-12 minutes, or until a very light brown. Remove and let cool completely.
1st Layer:
Mix cream cheese and sugar together, then blend with Cool Whip. Spread over crust very carefully.
2nd Layer:
Mix lemon puddling with milk and spread over the 1st layer.
Top with additional Cool Whip and remaining walnuts. Garnish with mint or lemon leaves. Refrigerate until ready to serve.
