Mini Cheesecakes
These are great for kids and also for when you just want a little dessert. I first made these for my dauther's 5th birthday party and they were an instant hit.
3 eggs
16 oz cream cheese
1/2 cup sugar
1 tsp vanilla
Vanilla Wafers
pie fillings for toppings (cherry, blueberry, etc.)
Cream together eggs, cream cheese, sugar, and vanilla.
Place a Vanilla Wafer in the bottom of a muffin paper liner in muffin pan and pour mixture into each liner.
Bake at 350 degrees until top is light brown and springy. Cover each cake with pie filling, or top with chocolate sauce.
