New York Flat Apple Pie
Crust:
2 cups flour
1 cup butter
3-4 Tbs ice water
Filling:
11-12 medium NYS apples (such as Rome, Cortland, Northern Spies)
1 cup sugar
1 Tbs cinnamon
1/2 cup NYS maple syrup
juice of 1/2 lemon
NYS sharp cheddar cheese
Cut butter into flour until the consistency of corn meal. Add ice water gradually and work in just enough to hold together. Roll out on a lightly floured board to about a 1-inch thickness. Refrigerate 15-20 minutes. Remove and roll again to 1/8 inch thickness. Cover flat pan or baking sheet with prepared crust.
Preheat oven to 450 degrees F. Peel, core, and cut each apple into 6 sections. Arrange in 1 layer on top of the crust. Mix sugar and cinnamon together and sprinkle over apples; sprinkle with lemon.
Bake 20 minutes at 450 degrees F then reduce heat to 350 degrees F. Bake for another 30 minutes and remove from oven. Sprinkle with maple syrup and serve warm with a generous slice of the cheese.
