    Peach Melba Tarts

    List of Ingredients




    These are cute little variations of the classic dessert.

    Mini sponge cake shells
    Peach ice cream
    Raspberry Sauce (recipe follows)

    Raspberry Sauce:
    20 oz frozen or 2 pints fresh raspberries
    2 Tbs sugar
    1 Tbs lemon juice
    2 tsp cornstarch
    1/2 tsp cinnamon

    Press raspberries through a sieve over a saucepan, forcing pulp through; discard seeds.

    Stir in sugar, lemon juice, cornstarch, and cinnamon. Cook over medium-low heat, stirring occasionally.

    Assemble ice cream in warm shells and top with sauce.
