Peachy-Keen Short Ribs
Serves 6 (unless they are hungry, and then it only serves 4)
4 lbs beef short ribs
1 tsp oil
1 can cling peaches in syrup
1/3 cup soy sauce
1/4 cup ketsup
Brown ribs slowly in hot oil. Drain peaches and reserve 3/4 cup of the syrup. Mix syrup with remaining ingredients and add to ribs. Cover and place in a 350-degree oven for 2 hours and bake until tender.
Add peaches to ribs and return to oven, uncovered, to bake for an additional 10 minutes.
