Stuffed Green Peppers
10 medium green peppers
1/2 cup olive oil
2 lbs ground beef
1/2 cup canned tomato paste
2 cloves garlic, peeled and minced
6 tsp chili powder
2 tsp salt
1/2 cup finely chopped peanuts
salad oil
1/4 cup flour
3 eggs
1 1/2 cup dried bread crumbs
Cut around stem of each pepper and pull out and discard seeds and pulp. Cook peppers in boiling salted wated for about 5 minutes. Drain; let cool 5 minutes.
In skillet, heat oil and add beef, tomato paste, garlic, chili powder, salt, and peanuts. Saute over medium heat, stirring constantly for about 5 minutes. Let cool slightly.
In another pan, heat 1 inch of salad oil to 375 degrees F. Meanwhile, stuff peppers with meat mixture; dust top of meat mixture inside pepper with flour.
In a pie plate, beat eggs with a fork. Dip each pepper into egg, then into bread crumbs.
Fry peppers in hot oil, turning once, until browned on all sides.
