New York Bagels
From the New York Times
3 onion bagels, cut in half
6 small eggs
6 slices deli ham
2 Tbs buter
salt and pepper
3 Tbs cheddar cheese, shredded
Pre-heat broiler and place rack 4 inches from heat. Line a cookie sheet with foil and spray with Pam.
Using a mug or cup as a guide, trim the ham slices so they are just slightly smaller than the bagel - about 3 inches in diameter. Place a slice on cookie sheet and top with about 1/2 Tbs of the shredded cheese. Place half of bagel over cheese... cut side down, then carefully break an egg on top of the hole of the bagel.
Place under broiler for 10 minutes or until egg whites are set. Remove from oven and spread with a little butter over the crust of the bagel.
Season with salt and pepper and serve.
