Boston Common Brunch
This is good to make the night before and pop into the oven for a nice, leisurely brunch in the morning. Makes 8 servings.
8 slices stale bread
2 cups sliced mushrooms
1 small onion, chopped
4 Tbs butter
2 cups ham, diced
4 cups Cheddar cheese, grated
2 Tbs flour
2 tsp dry mustard
8 eggs
3 cups milk (whole or 2%)
1 tsp salt
1 tsp nutmeg
Remove crusts and cube the bread into bite-size pieces. Spread into bottom of a greased 9 x 13-inch baking dish.
Saute mushrooms and add onion in melted butter. Spoon over bread and arrange ham on top.
Combine cheese, flour and mustard and sprinkle over ham.
In a separate bowl, beat eggs together and add milk, salt, and nutmeg. Combine well, and pour over all.
Tightly cover dish and refrigerate at least 4 hours, or overnight. Bake in center of a preheated 350-degree oven for about 50-55 minutes or until set.
