    Blueberry Lemon Quickbread

    1 3/4 cup All-purpose flour
    2/3 cup Sugar
    1 Tbs Baking powder
    1 Tbs Grated lemon zest
    1 cup Milk
    2 Eggs
    3 Tbs Butter, melted
    1 tsp Vanilla
    1 cup Blueberries (fresh or thawed)

    In a large bowl, stir together flour, sugar, baking powder and lemon zest. Whisk milk, eggs, butter and vanilla;
    stir into flour mixture just until blended. Fold in
    blueberries.

    Pour into lightly greased loaf tins and bake at 400 degrees F (200s C) for about 30-35 minutes or until golden and firm
    to the touch.
