Macadamia Nut-White Choc Chip Muffins
This is the winning recipe from the 1995 New York State Fair - heavens no, it isn't mine! But I do make them, and they are wonderful!
2 cups flour
2 tsp baking powder
1 cup milk (room temperature)
1 egg, beaten
1 3/4 cup white chocolate chips
1/2 cup packed brown sugar
1/2 tsp salt
8 Tbs butter (unsalted), melted and cooled
2 tsp vanilla extract
3 1/2 oz chopped macadamia nuts
Preheat oven to 400 degrees F. Lightly butter 12 muffin cups.
In a large pan, combine flour, brown sugar, baking powder, and salt.
In another bowl, whisk the milk, butter, egg, and vanilla. Make a well in the center of the dry ingredients and gradually stir in the liquid, just until combined. Stir in the chips and nuts.
Spoon into prepared muffin cups filling all the way to the top. Bake for about 20 minutes, until muffins are a very light brown and a toothpick inserted in the center comes out clean.
Transfer pan to a wire rack and cool for about 5 minutes; remove muffins from pan and cool on the rack. Serve at room temperature for best flavor.
