Baked Potato Soup
Great on a cold winter day - you can make this a more hearty dish by adding leftover ham, and omitting the salt.
Serves 6
2 leeks, chopped
2 medium yellow onions, chopped
2 tsp vegetable oil
4 medium baked potatoes, peeled and chopped
6 cups chicken or vegetable stock
Salt and pepper to taste
6 Tbs sour cream
1/2 cup grated Cheddar cheese
1/4 cup bacon, crumbled
3 green onions, chopped (for garnish)
Saute leeks and onion in oil until clear. Add potatoes and cover with stock.
Simmer 20 minutes and season with salt and pepper. Whisk in sour cream and cook for 2 more minutes.
Garnish each bowl with cheddar, bacon, and green onions.
