Carrot-Zucchini Surprise
The tarragon gives this dish a light flavor, almonst licorice-like. Combined with the sweetness of the carrots, and the richness of the butter, this is surprisingly good!
3 medium zucchini, peeled and julienned
4 large carrots, peeled and julienned
3 Tbsp butter
1 Tbs cup diced chives
1 1/2 tsp dried tarragon
Melt butter in pan. Add carrots and saute for 2 minutes. Add zucchini and sprinkle with tarragon. Saute at
medium-high heat until vegetables begin to wilt, about 5 more minutes.
