Garlic Mashed Potatoes
5 lbs (8 large) potatoes
6 oz cream cheese
1 cup sour cream
1/2 tsp salt (more or less to taste)
1/4 tsp white pepper
1/2 tsp garlic powder (or 1 tsp fresh minced garlic)
3 Tbs butter
Peel and cook potatoes. Drain and mash. Add remaining ingredients and beat until smooth and light.
Spread into a greased pan (13 x 9 x 2) and cover and refrigerate overnight.
Dot with additional butter if desired and bake at 350 degrees F for 45 minutes.
Garnish with parsely and serve.
