    Oriental Ginger Salad Dressing

    Process the following ingredients for 30
    seconds in a food processor:

    2 cloves garlic
    1/2 onion
    1 carrot
    2 1/2 Tbs grated ginger
    1/2 tsp ground mustard

    Add while still processing:
    2 tsp soy sauce
    2 tsp apple juice
    1 tsp sesame oil
    3/4 - 1 cup vegetable oil (I use peanut oil, but you might prefer not to)
    1/2 cup apple cider vinegar

    Bring to boil, and let simmer for 15 minutes. Let cool and serve over fresh greens, water chestnuts, carrots, and bean sprouts.
