The Best Potato Salad You'll Ever Taste
The taste of the vinegar combined with the dill seed is very different and unlike other potato salads which I find a little bland. This recipe was handed down to me from my mother who found it in a magazine about 30 years ago! I made it to take to a family party one time, and it is my job to do so ever since!! I have made some changes, but basically, this is it:
6-7 medium-sized potatos
1/2 cup frozen peas
1 small carrot
1/2 onion, chopped
2 stalks celery, chopped
parsely or chives for garnish
2/3 cup mayonnaise
1 Tbs cider vinegar
2 Tbs salad oil
1 tsp dill seed
1/2 t celery seed
1/2 tsp salt
1/4 tsp black pepper
Boil or pressure-cook the potatos and let cool slightly, so that you can handle them comfortably. Dice into bite-sized pieces and add peas. Slice or grate carrot, chop onion and celery, and add to potatos.
Combine mayonnaise and next six ingredients in a quart-size jar. Shake well until blended and smooth. Pour over potato mixture and refrigerate several hours before serving.
Garnish with chopped parsely or chives.
