    Warm Cabbage Salad

    Great with ham or any pork-based meal.

    3 slices bacon
    1/4 cup chopped red onion
    6 cups coarsely shredded cabbage (aprox 1 1/2-lb head)
    2 Tbs water
    1/4 tsp salt
    1/4 tsp sugar
    1/8 tsp black pepper
    1 Tbs cidar vinegar

    Dice the bacon and saute in a large skillet over medium-high heat until almost done, about 2 minutes. Add the onion and continue cooking another minute, until the onion
    browns a little.

    Add cabbage, water, salt, sugar, and pepper. Saute and toss about 2 or 3 minutes, but do not allow the cabbage to be overcooked--you want it to be slightly wilted but stil l crisp.

    Add the vinegar and toss again. Serve immediately.
