Portobello Mushrooms w/Teriaki Marinade
This is a very rich dish, and it really does taste like steak! Serve on rice with a side salad and some fresh bread and it is a satisfying meal. Makes 4 servings.
1 lb fresh portobello mushrooms
1/2 tsp brown sugar
2 Tbs cooking oil
2 Tbs lemon juice
2 Tbs soy sauce
1/2 tsp dry mustard
1/2 tsp ground ginger
2 Tbs sliced green onion
1 Tbs snipped cilantro
Brush clean and cut off the mushroom stems even with the caps. Place mushrooms in a large plastic bag set in a bowl.
For teriyaki marinade, whisk together the brown sugar, cooking oil, lemon juice, soy sauce, mustard, and ginger in a small bowl. Pour teriyaki marinade over mushrooms. Close bag. Refrigerate 2-4 hours, turning several times.
Place mushroom and marinade in a 3-quart saucepan. Cover and simmer about 15 minutes or till mushroom are just tender. Uncover and simmer for 3 to 5 minutes more or till most of the liquid has evaporated. Cool slightly. Cut into 1/4-inch-thick slices.
To serve, arrange on individual plates or on a small serving platter. Drizzle with any remaining cooking liquid. Sprinkle with green onion and cilantro.
