Sante Fe Rice
This is very easy - the original recipe called for Minute Rice, but I do it this way...
2 cups rice
1 cup drained red beans
1 cup salsa
Boil 3 cups water water in pan and stir in rice. Let simmer for 15 minutes. Add beans and salsa and cover. Continue to cook on low heat for 5-7 more minutes until water is absorbed, and rice is tender.
