Vegetarian Chili
Better the next day, after the flavors have mingled a bit.
2 Tbs corn oil
1 1/4 cup chopped onion
2 cloves garlic, minced
1 Tbs chili powder
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp ground cumin
2 lb tomatoes, cut in eighths
1 can (16 oz.) kidney beans, drained
In saucepan over medium heat, heat oil. Add onion, garlic, chili powder, basil, oregano and cumin. Cook 5 minutes or until onion is tender, stirring frequently. Add in tomatoes and kidney beans; heat to boiling.
Reduce heat to low and simmer for 30 to 35 minutes.
