Shrimp Toast

List of Ingredients
- 1 lb. fresh shrimp, chopped fine
- 6 water chestnuts, chopped fine
- 1 Tbsp. cornstarch
- 1 tsp. sugar
- 2 tsp. salt
- 1 tsp. ginger
- 1 Tbsp. dry sherry
- green onion, white part only, chopped fine
- 1 egg white, beat until foamy
- Stale white bread
Instructions
- Shell and devein shrimp. Add chopped chestnuts, onion and rest of ingredients to a bowl. Makes somewhat of a paste.
- Cut stale white bread with crusts off into four.
- Spread shrimp mixture over bread. Deep fry shrimp side down, then turn. (do not make too brown if you are going to reheat.)
- Drain on paper towels. Reheat at 400 degrees till hot.
- Can be frozen
