    Shrimp Toast

    List of Ingredients


    • 1 lb. fresh shrimp, chopped fine
    • 6 water chestnuts, chopped fine
    • 1 Tbsp. cornstarch
    • 1 tsp. sugar
    • 2 tsp. salt
    • 1 tsp. ginger
    • 1 Tbsp. dry sherry
    • green onion, white part only, chopped fine
    • 1 egg white, beat until foamy
    • Stale white bread


    Instructions


    1. Shell and devein shrimp. Add chopped chestnuts, onion and rest of ingredients to a bowl. Makes somewhat of a paste.
    2. Cut stale white bread with crusts off into four.
    3. Spread shrimp mixture over bread. Deep fry shrimp side down, then turn. (do not make too brown if you are going to reheat.)
    4. Drain on paper towels. Reheat at 400 degrees till hot.
    5. Can be frozen
