Skewered Chicken Marbella

- 2 lbs. boned chicken breast, cut into bite-sized cubes
- 15 cloves garlic, minced
- 1/4 cup dried oregano
- salt and black pepper, to taste
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 2 cups pitted bite-size prunes
- 2 cups Spanish green olives
- 1/2 cup capers with juice
- 6 bay leaves
- 1 cup brown sugar
- 1 cup white wine
- 1/4 cup Italian parsley, finely chopped
Instructions
- In a large bowl combine chicken, garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olives, capers and juice and bay leaves.
Cover and marinate in refrigerator overnight.
- On a 6-inch skewer, place 1 chicken cube, 1 prune and 1 olive. Arrange skewers in a single layer in a shallow baking pan and spoon marinade over them evenly. Sprinkle skewers with brown sugar and wine; garnish with parsley.
- Bake at 350 degrees for 30 minutes, basting frequently.
- Serve hot or at room temperature.
