    List of Ingredients


    • 2 lbs. boned chicken breast, cut into bite-sized cubes
    • 15 cloves garlic, minced
    • 1/4 cup dried oregano
    • salt and black pepper, to taste
    • 1/2 cup red wine vinegar
    • 1/2 cup olive oil
    • 2 cups pitted bite-size prunes
    • 2 cups Spanish green olives
    • 1/2 cup capers with juice
    • 6 bay leaves
    • 1 cup brown sugar
    • 1 cup white wine
    • 1/4 cup Italian parsley, finely chopped


    Instructions


    1. In a large bowl combine chicken, garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olives, capers and juice and bay leaves.


    2. Cover and marinate in refrigerator overnight.

    3. On a 6-inch skewer, place 1 chicken cube, 1 prune and 1 olive. Arrange skewers in a single layer in a shallow baking pan and spoon marinade over them evenly. Sprinkle skewers with brown sugar and wine; garnish with parsley.
    4. Bake at 350 degrees for 30 minutes, basting frequently.
    5. Serve hot or at room temperature.
