    Snow peas stuffed with crab

    List of Ingredients


    • 1/2 lb. fresh snow peas
    • 12 oz. crab meat, well drained
    • 2 hard cooked eggs, finely chopped
    • 1/4 cup mayonnaise
    • 3 dashes Tabasco sauce
    • 1 tsp. capers
    • 3 Tbsp. celery, finely chopped


    Instructions


    1. Wash and clean snow peas. Split peas on top side with sharp knife, leaving bottom intact to form a little boat.
    2. Blanch in lightly salted water for 10 seconds, then submerge in cold water for a moment. Remove and drain. Set aside to cool.
    3. Mix filling ingredients. Stuff snow peas generously with crab meat filling, about 1 heaping teaspoonful for each snow pea.
    4. Chill in refrigerator.
