    Spicy Lemon Shrimp W/Basil Mayonnaise

    List of Ingredients


    • 1 tblsp grated lemon peel
    • 3 tblsps lemon juice
    • 3/4 tsp. crushed red pepper
    • 1/2 tsp. salt
    • 2 cloves garlic, finely chopped
    • 3 tblsps olive oil
    • 1 pound uncooked peeled,deveined large shrimp
    • 1/2 cup loosely packed fresh basil leaves
    • 1/2 cup mayonnaise



    Instructions


    1. Set oven control to broil. Mix lemon peel, lemon juice, red pepper, salt, garlic and 1 tblsp of oil in a med. glass or plastic bowl.
    2. Add shrimp: toss to coat. Spread shrimp in ungreased jelly roll pan. Broil with top 2 to 3 inches from heat 3 to 5 minutes or until shrimp and pink and firm.
    3. Place basil and remaining 2 tblsps of oil in food processor. Cover and process until chopped. Add mayonnaise; cover and process until smooth.
