New England Style Baked Scrod

List of Ingredients
- 4 8 oz. pieces scrod fillet
- 1 Tbsp. lemon juice
- 1/2 cup butter, melted
- 30 round buttery crackers ground into fine crumbs
- 2 Tbsp. fresh basil leaf, coarsely chopped
- 1 Tbsp. fresh oregano, coarsely chopped
- 2 tsps. garlic powder
- 2 large tomatoes, chopped
Instructions
- Heat oven to 400 degrees. Butter a 13x9 inch pan.
- Place fillets in baking dish and drizzle lemon juice and 1/2 the butter.
- Combine cracker crumbs, 1/2 the basil, oregano, garlic. Stir in remaining butter.
- top each fillet with crumb mixture. bake 10-15 minutes or until topping is golden brown.
- To serve surround each fillet with chopped tomato and garnish with remaining basil.
