    List of Ingredients


    • 4 8 oz. pieces scrod fillet
    • 1 Tbsp. lemon juice
    • 1/2 cup butter, melted
    • 30 round buttery crackers ground into fine crumbs
    • 2 Tbsp. fresh basil leaf, coarsely chopped
    • 1 Tbsp. fresh oregano, coarsely chopped
    • 2 tsps. garlic powder
    • 2 large tomatoes, chopped


    Instructions


    1. Heat oven to 400 degrees. Butter a 13x9 inch pan.
    2. Place fillets in baking dish and drizzle lemon juice and 1/2 the butter.
    3. Combine cracker crumbs, 1/2 the basil, oregano, garlic. Stir in remaining butter.
    4. top each fillet with crumb mixture. bake 10-15 minutes or until topping is golden brown.
    5. To serve surround each fillet with chopped tomato and garnish with remaining basil.
