Orzo with Bacon

List of Ingredients
- 2 slices bacon, cut in 1/2 in. pieces
- 1 medium onion, chopped
- 1 carrot, grated
- 1 clove garlic, minced
- 2 1/2 cups chicken broth
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup orzo pasta
- 1/4 cup minced fresh parsley
Instructions
- In pot over medium heat cook bacon until crisp. Transfer to paper towels. Discard all but 1 Tbs. of drippings from pot.
- Reduce heat to low; add onion, carrot and garlic. Cook until vegetables soften, about 10 minutes. Add broth, salt and pepper.
- Increase heat to high. Bring to a boil. Add orzo; reduce heat to low. Cover and simmer until orzo is tender and liquid is absorbed, about 12 minutes.
- Remove from heat. Stir in parsley. Sprinkle with reserved bacon.
