    List of Ingredients


    • 2 slices bacon, cut in 1/2 in. pieces
    • 1 medium onion, chopped
    • 1 carrot, grated
    • 1 clove garlic, minced
    • 2 1/2 cups chicken broth
    • 1/4 tsp. salt
    • 1/4 tsp. pepper
    • 1 cup orzo pasta
    • 1/4 cup minced fresh parsley


    Instructions


    1. In pot over medium heat cook bacon until crisp. Transfer to paper towels. Discard all but 1 Tbs. of drippings from pot.
    2. Reduce heat to low; add onion, carrot and garlic. Cook until vegetables soften, about 10 minutes. Add broth, salt and pepper.
    3. Increase heat to high. Bring to a boil. Add orzo; reduce heat to low. Cover and simmer until orzo is tender and liquid is absorbed, about 12 minutes.
    4. Remove from heat. Stir in parsley. Sprinkle with reserved bacon.
