Arroz Con Pollo

List of Ingredients
- 3 lb. Chicken cut-up
- 3/4 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- 2 1/2 cups chicken broth
- 1 cup uncooked regular long grain rice
- 1 medium onion, chopped
- 2 cloves garlic, crushed
- 1/2 teaspoon dry oregano
- 1/8 teaspoon turmeric
- 1 bay leaf
- 1 package frozen peas
- green olives
- pimiento
Instructions
- Heat oven 350 degrees.
- Place chicken skin side up in ungreased dish 13x9 inches.
- Sprinkle with salt, pepper and paprika. Bake uncovered 30 minutes.
- Heat broth to boiling. Remove chicken from dish, drain fat.
- Add broth and all else to dish. Top with chicken.
- Cover with aluminum foil and bake at 350 degrees about 1/2 hour.
- Garnish with pimiento strips and olives.
