Chicken with Tons of Garlic

List of Ingredients
- 1 3 1/2 lb. roasting chicken
- 5 garlic cloves
- chopped garlic
- 4 potatoes, cut in half
- 2 carrots pared and cut in pieces
- 2 stalks celery cut into 1 inch pieces
- 2 large onions, cut in half
- 1/4 cup white wine
- 1/4 chicken broth (use more)
- 2 Tbsp. olive oil
- 2 Tbsp. finely chopped parsley
- 2 tsp. basil
- 1 tsp. salt
- 1 tsp. oregano
- 1/2 tsp. rosemary leaves, crushed
- 1/8 tsp. pepper
- 1 tsp. thyme
- pinch crushed red pepper
Instructions
- Preheat oven 350 degrees.
- Put chicken in roasting pan. Put 5 cloves inside chicken and spread plenty of chopped garlic over and around chicken. Spread vegetables around chicken.
- Combine remaining ingredients in bowl and stir until blended. Pour over chicken.
- Cover and bake 1 hour. Remove cover, baste chicken and vegetable. Bake 20 more minutes or until chicken is tender.
