    Chicken with Tons of Garlic

    List of Ingredients


    • 1 3 1/2 lb. roasting chicken
    • 5 garlic cloves
    • chopped garlic
    • 4 potatoes, cut in half
    • 2 carrots pared and cut in pieces
    • 2 stalks celery cut into 1 inch pieces
    • 2 large onions, cut in half
    • 1/4 cup white wine
    • 1/4 chicken broth (use more)
    • 2 Tbsp. olive oil
    • 2 Tbsp. finely chopped parsley
    • 2 tsp. basil
    • 1 tsp. salt
    • 1 tsp. oregano
    • 1/2 tsp. rosemary leaves, crushed
    • 1/8 tsp. pepper
    • 1 tsp. thyme
    • pinch crushed red pepper


    Instructions


    1. Preheat oven 350 degrees.
    2. Put chicken in roasting pan. Put 5 cloves inside chicken and spread plenty of chopped garlic over and around chicken. Spread vegetables around chicken.
    3. Combine remaining ingredients in bowl and stir until blended. Pour over chicken.
    4. Cover and bake 1 hour. Remove cover, baste chicken and vegetable. Bake 20 more minutes or until chicken is tender.
