Garlic Soup

Recipe Introduction
I thicken this soup with Wondra flour and then use a hand blender.
List of Ingredients
2 tbsp. olive oil
1 1/2 cups sliced onions
1/3 cup peeled garlic cloves,(12 to 14), plus 1 tbsp. minced garlic
3 bay leaves
1 tsp. salt
1/2 tsp. black pepper
8 cups chicken broth
1 tsp. chopped fresh basil
1 tsp. fresh thyme
2 cups diced French bread
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
Recipe
Heat oil in soup pot over med-high heat. Add onions, garlic cloves, bay leaves, salt and pepper. Saute until caramelized, about 7 minutes. Stir in stock, minced garlic, basil and thyme and bring to a boil. Reduce heat and simmer 40 minutes. Turn heat up to high and whisk in bread and cream until dissolved. Whisk in Parmesan cheese and remove from heat. Sprinkle with croutons.
