Balsamic-glazed Carrots

List of Ingredients
- 2 lbs. fresh carrots, peeled and trimmed
- 3 tablespoons butter
- 2 large shallots, sliced
- 1 1/2 tsp. chopped fresh thyme
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 cup packed light brown sugar
- 3 tablespoons balsamic vinegar
Instructions
- Over high heat bring pot of water to boil. Add carrots; cook until tender.. Drain;set aside.
- In a large nonstick skillet melt butter over med-high heat. Add next 4 ingredients; cook until shallots are softened.
- Stir in sugar and vinegar, stirring until sugar is melted. Reduce heat to medium.
- Add carrots; cook until heated through and glaze thickens, 6-8 minutes.
