    Balsamic-glazed Carrots

    List of Ingredients


    • 2 lbs. fresh carrots, peeled and trimmed
    • 3 tablespoons butter
    • 2 large shallots, sliced
    • 1 1/2 tsp. chopped fresh thyme
    • 1/2 tsp. salt
    • 1/4 tsp. pepper
    • 1/3 cup packed light brown sugar
    • 3 tablespoons balsamic vinegar


    Instructions


    1. Over high heat bring pot of water to boil. Add carrots; cook until tender.. Drain;set aside.
    2. In a large nonstick skillet melt butter over med-high heat. Add next 4 ingredients; cook until shallots are softened.
    3. Stir in sugar and vinegar, stirring until sugar is melted. Reduce heat to medium.
    4. Add carrots; cook until heated through and glaze thickens, 6-8 minutes.
