Recipe Introduction
This recipe is one I remember my first Mother-in-law making. I loved them and was impressed with the creation process. I have looked for 20 years for this recipe and upon a visit to my sisters house in NY I was leafing through this cook book and saw the recipe. The ingredients certainly sounded familiar so upon request I was allowed to borrow it to take to my home in Maine where I could take those that I liked from it.
List of Ingredients
- 10 to 12 Large cucumbers
- 1 pt. white vinegar
- 8 c. sugar
- 1/2 tsp. oil of cloves
- 1/2 tsp. oil of cinnamon
- 1/2 lb jar maraschino cherries, drained
Instructions
- Peel, quarter and remove seeds from cucumbers.
- Cut into 3/4 inch cubes
- Cook in water just to cover, until tender, about 1/2 an hou.
- Drain.
- IN a different pan, combine vinegar, sugar and oils.
- Bring to a boil.
- Pour over cooked cucumbers.
- Cover and let stand overnight
- Drain off syrup and bring back to a boil.
- Add cucmbers and remove from heat.
- Slice cherries in half and add to the hot cucumbers and syrup.
- Pack in sterilized jars
- Process in water bath for 10 minutes
