Mexican Cornbread

Nice moist cornbread recipe delicious warm or cold
List of Ingredients
- 1 cup yellow cornmeal
- 1/3 cup all-purpose flour
- 2 Tbls sugar
- 1 tsp salt
- 1/2 tsp baking soda
- 2 tsp baking powder
- 2 eggs, beaten
- 1 cup Buttermilk *(see final comments)
- 1/2 cup veg oil
- 1 sm. can cream corn (about 8oz.)
- 1/4 cup finely chopped onion
- 2 Tbls chopped bell pepper (red & green both)
- 1-2 tbls finely chopped jalapeno pepper (optional)
- 1/2 cup Monterey Jack cheese
Instructions
- In a Lg bowl, combine cornmeal, flour, sugar, salt, baking powder, baking soda. Stir to blend
- In another bowl combine the beaten eggs, buttermilk, oil, corn, onion, peppers and cheese.
- Blend with dry ingredients until moistened.
- Pour into greased 8 or 9 inch square baking pan
- Bake at 350 for 30-35 minutes or until cornbread is browned.
Final Comments
Butter milk substitute. If you do not have buttermilk:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
2. Add enough milk to bring the liquid up to the one-cup line.
3. Let stand for five minute. Then, use as much as your recipe calls for.
