Recipe Introduction
Delicious hot or cold. Do not overcook as it can dry out rapidly. For a milder version scrape out the seeds of the jalapenos.
List of Ingredients
- Grated zest of one orange
- 1/4 cup orange juice
- 4 tsp. olive oil
- 1 jalapeno pepper, sliced.
- 2 garlic cloves, sliced
- 1 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- One (1 lb) pork tenderloin
Instructions
- Prepare marinade, In a gallon-size sealable plastic bag, combine the orange zest, juice, oil, jalapeno, garlic, cumin, salt and pepper: add the pork. Seal the bag, squeezing out the air:L turn to coat the pork.
- Refrigerate, turning the bag occasionally, at least 2 hours or over night.
- Preheat oven to 450
- Line a roasting pan with foil and spray with nonstick cooking spray. Place tenderloin in the pan; drizzle with the remaining marinade. Roast 5 minutes: reduce oven temp to 350 and roast until an instant-read thermometer registers 165 F, 15-18 minutes.
- Let stand 5 minutes before slicing
