Pineapple Salsa Salad

Recipe Introduction
Rachel calls it Salsa Salad. I call it Make My Mouth Happy Salsa. I'm addicted to this. It goes great with her BBQ Spiced Chicken Recipe.
List of Ingredients
- 4 Plum Tomatoes, chopped.
- 1 Yellow Bell pepper, seeded and chopped.
- 1 Red Onion, chopped
- 1/4 Fresh Pineapple, cut into spears and grilled.
- 2 Limes, Juiced
- Handfull of Fresh Cilantro leaves, chopped
- 2-3 Tbs Extra virgin Olive oil
- Salt and freshly ground Pepper to taste.
Instructions
- Chop into medium size and combine the Tomatoes, Bell pepper, Onion and Grilled Pineapple spears.
- Dress Salad with the Lime Juice and Olive Oil.
- Season with the Cilantro, Salt and Pepper.
- Serve Immediately. Can be chilled slightly. I don't recommend as a leftover for more than a day.
Final Comments
I love this Salsa and can eat it anytime! Wow your guests at your next BBQ or Dinner.
