Pumpkin-Chipotle Polenta

Recipe Introduction
Polenta is a ground white or yellow cornmeal. It can be found in most supermarkets. It is in its own package labeled Polenta. Not the Labeled boxes of Cornmeal which is sold seperately in white or yellow forms.
List of Ingredients
- 2 Cups of Chicken Stock, (make your own or buy prepackaged in either a box or can at your local supermarkets)
- 1 Cup milk or Half-and-Half
- 1 Chipotle in adobo, finely chopped and 2 Tsp adobo sauce. (Found also in your local supermarkets in a can).
- 3/4 Cup Quick cooking Polenta
- 1 15oz can Pumpkin Puree
- 2 Tbs Butter
- 2 Tbs Honey
Instructions
- Heat the stock and milk or Half-and-Half in a sauce pan with the Chipotle and adobo sauce.
- Wisk in the Polenta and thicken 2-3 minutes.
- Stir in the pumpkin to warm through.
- Stir in Butter and Honey and season with salt and pepper to taste.
- This dish is a bit Spicy. For a little lighter spice, half the portion of the Chipotle and adobo sauce to the recipe, or adjust to your tastes.
Final Comments
Rachel also included this recipe with her BBQ Spiced Chicken and Salsa Salad. A great meal/BBQ all together.
