    Nice and quick recipe to serve anytime. Serves 4-6.


    List of Ingredients


    • 6 Large Red or Yellow Onions, peeled and thinly sliced.
    • Olive oil
    • 1/2\4 Tsp Sugar
    • 2 Cock)loves garlic, minced.
    • 8 Cups Beef stock or Chicken stock, or a combination of the two. (Traditionally the soup is made with Beef stock).
    • 1/2 cup Dry Vermouth or Dry White Wine.( I suggest you buy a small bottle of Vermouth so you will have a little on hand when Mom comes to visit and you can make her a Dirty Martini) P.S. Dont forget to have Vodka and a Jar of Olives on hand as well!
    • 1 Bay Leaf
    • 1/4 Tsp dry Thyme
    • Salt and Pepper
    • 8 Slices of Toasted French Bread
    • 1 n 1/2 Cups of grated Swiss Gruyere with a little grated Parmesan Cheese.


    Instructions


    1. In a large sauce pan, saute the onions in olive oil on medium high heat until well browned, but not burned, about 30-40 minutes (or longer). Add the sugar about 10 minutes into the process to help with the carmelization.
    2. Add garlic and saute for 1 minute. Add the stock,vermouth or wine, bay leaf and thyme. Cover partially and simmer until the flavors are well blended, abaout 30 minutes. Season to taste with salt and pepper. Discard the Bay leaf.
    3. To serve you can use either individual oven-proof soup bowls or one large casserole dish. (I prefer oven crocks)

    4. Ladle the soup into the bowls or casserole dish. Cover with the toast and sprinkle with the cheese.
    5. Put into the broiler for 10 minutes at 350 degrees F, or until the cheese bubbles and is slightly browned.
    6. Serve Immediately


    Final Comments


    Dirty Martini for Mom, Mix 1oz Vermouth, 1oz Olive juice, 4oz Vodka, in a shaker over ice. Pour and serve. Mom will smile...(Its a Dbl) Caution: Only serve the one Dbl!
