    Padaha (Pad-a-hay)

    List of Ingredients


    • 2 cups Flour
    • 1 egg
    • Cold Water
    • 3 Baking size Potatoes
    • Cheese (Usually Cheddar)
    • Onion
    • Salt
    • Sour Cream
    • Cottage Cheese
    • Butter


    Instructions


    1. Put Flour in a deep mixing bowl and make a well in the center.

    2. Add egg then add cold water a little at a time until it makes a stiff dough. Work mixture with your hands.

    3. Place a cloth on table to use for rolling out dough. Then let dough set under inverted bowl for about an hour or longer. This will make the dough easier to roll out.

    4. Peel and cut Potatoes for boiling. When cooked mash potatoes.

    5. Fry onions in butter or oil.

    6. Shred cheese.

    7. Mix mashed Potatoes, fried Onions and shredded Cheese for filling.

    8. Roll out dough and cut into squares (about 3 - 4 inch squares).

    9. Fill each square with Potatoe mixture and fold into triangle shape sealing mixture inside of dough.

    10. Do not let dough prepared for boiling touch each other before putting in water to cook, as they will stick together.

    11. Using a big kettle bring water to boil to be able to submurge pasta to boil them.

    12. Put a few Padaha in the boiling water at a time and boil for 15 to 20 minutes. (Taste for doneness.)

    13. When all are cooked put in a large serving bowl and cover with Butter, Sour Cream and Cottage Cheese to serve.

    14. Salt to taste.



    Final Comments


    Charlie and I add cooked bacon pieces to the sauce covering, with our Padaha.
