Gaspacho Cocktail
Not a gaspacho fan, I find this one truly delicious and worth the time and effort.
List of Ingredients
- 2 - 28 ounce can whole peeled tomatoes, with their liquid
- 1/2 cup tomato paste
- 1/2 cup minced onion
- 1/4 cup white vinegar
- 1/4 cup olive oil
- 4 green peppers, finely chopped
- 6 cloves of garlic, peeled and minced
- 2 medium cucumbers, peeled, seeded and finely chopped
- 4 stalks celery, finely chopped
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/8 teaspoon cayenne (or more to taste)
- 1/2 cup tequilla or vodka (very optional)
Instructions
- If you have a food processor or blender,you can leave the vegetables in bigger pieces and blend until chunky.
- If not, cut and mince by hand, then mix in pitcher.
- Chill well before serving, to allow the flavors to blend.
- The original recipe, which is quite old, called for the yolk of one egg.
