    This is a great dish for a picnic or BBQ.


    List of Ingredients


    • 2 pounds dried black beans
    • 3 quarts water
    • 1 large onion
    • 2 cloves garlic
    • 1 bay leaf
    • 1 tablespoon oil
    • salt and pepper
    • 1 pound smoked ham, ground
    • 1 cup tomato juice
    • 1 teaspoon cumin
    • 1 teaspoon marjoram
    • 1 pound cubed ham
    • sour cream


    Instructions


    1. Presoak beans,or bring to a boil with water to cover and allow to stand for two hours.
    2. Drain
    3. Add the 3 quarts water, onion, garlic and bay leaf.Bring to a boil, cover and simmer for 2 hours.
    4. Heat bacon fat in skillet. Cook ground ham for 2-3 minutes, add tomato juice, salt and pepper and spices.
    5. Stir into beans, simmer, covered, for 30 minutes. Add ham cubes and simmer 10 minutes longer. Top with sour cream.
