Recipe Introduction
This is a great dish for a picnic or BBQ.
List of Ingredients
- 2 pounds dried black beans
- 3 quarts water
- 1 large onion
- 2 cloves garlic
- 1 bay leaf
- 1 tablespoon oil
- salt and pepper
- 1 pound smoked ham, ground
- 1 cup tomato juice
- 1 teaspoon cumin
- 1 teaspoon marjoram
- 1 pound cubed ham
- sour cream
Instructions
- Presoak beans,or bring to a boil with water to cover and allow to stand for two hours.
- Drain
- Add the 3 quarts water, onion, garlic and bay leaf.Bring to a boil, cover and simmer for 2 hours.
- Heat bacon fat in skillet. Cook ground ham for 2-3 minutes, add tomato juice, salt and pepper and spices.
- Stir into beans, simmer, covered, for 30 minutes. Add ham cubes and simmer 10 minutes longer. Top with sour cream.
