    Shaker Rhubarb Pie


    List of Ingredients


    • Pastry for 2 crust pie
    • 1 1/2 cups granulated sugar
    • 3 tablespoons flour
    • 1/2 teaspoon nutmeg
    • 2 tablespoon melted butter
    • 2 eggs
    • 3 cups rhubarb, cut in 1 inch pieces


    Instructions


    1. Preheat oven to 450 degrees.
    2. Put sugar, flour, butter and eggs into bowl, mix well until sugar is mostly dissolved and mixture is smooth.
    3. Arrange rhubarb in pastry - pour custard over the rhubarb.
    4. Top with crust, making it a lattice if you wish.
    5. Bake at 450 degrees for 10 minutes. Then bake at 350 degrees for 30 minutes or until rhubarb is done.
    6. Allow to cool before cutting.
