Shaker Rhubarb Pie
List of Ingredients
- Pastry for 2 crust pie
- 1 1/2 cups granulated sugar
- 3 tablespoons flour
- 1/2 teaspoon nutmeg
- 2 tablespoon melted butter
- 2 eggs
- 3 cups rhubarb, cut in 1 inch pieces
Instructions
- Preheat oven to 450 degrees.
- Put sugar, flour, butter and eggs into bowl, mix well until sugar is mostly dissolved and mixture is smooth.
- Arrange rhubarb in pastry - pour custard over the rhubarb.
- Top with crust, making it a lattice if you wish.
- Bake at 450 degrees for 10 minutes. Then bake at 350 degrees for 30 minutes or until rhubarb is done.
- Allow to cool before cutting.
