    Zuchinni Marmalade

    Recipe Introduction


    This originally came from an Amish home. I could not taste the jello the first time this was served, had to ask "what makes this so good" to figure out the recipe.


    List of Ingredients


    • 6 cups peeled, shredded zucchini
    • 5 cups sugar
    • 1 20 ounce can crushed pineapple, undrained
    • 1 whole orange, ground in blender or processer
    • 1 package, 6 ounce apricot or orange gelatin


    Instructions


    1. Combine all but gelatin, bring to a boil, reduce heat and boil slowly 15 minutes.

    2. Remove from heat and stir in the gelatin until dissolved.

    3. Ladle into hot steralized jars and seal.

    4. Makes 6 half pints. Easily to double.
