Broccoli Pie
Ever work with someone who brought such a good lunch every day that you found yourself drooling? This recipe was given to me by Evelyn, an R.N. I used to work with in Seattle.
List of Ingredients
- Prebaked pastry shell to for 9" pie pan
- 1 1/2 cup Swiss cheese, grated
- 2/3 cup Parmesan cheese, grated
- Bread crumbs from two slices of dry bread
- 1 1/2 to 2 pounds of broccoli, cut in bite size pieces
- 4 tablespoons butter or margerine
- 1/3 cup chopped parsley
- 1 1/2 cups half and half
- 4 eggs
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Saute broccoli with butter or margerine until tender.
- Place broccoli in pastry shell, sprinkle with parsley.
- In a bowl, mix eggs, half and half, salt and pepper.
- Add Swiss cheese, blend well.
- Pour over broccoli.
- Sprinkle top with Parmesan and bread crumbs.
- Bake at 400 degrees for 40-50 minutes. Let stand 10 minutes before serving.
