    Broccoli Pie

    Ever work with someone who brought such a good lunch every day that you found yourself drooling? This recipe was given to me by Evelyn, an R.N. I used to work with in Seattle.


    List of Ingredients


    • Prebaked pastry shell to for 9" pie pan
    • 1 1/2 cup Swiss cheese, grated
    • 2/3 cup Parmesan cheese, grated
    • Bread crumbs from two slices of dry bread
    • 1 1/2 to 2 pounds of broccoli, cut in bite size pieces
    • 4 tablespoons butter or margerine
    • 1/3 cup chopped parsley
    • 1 1/2 cups half and half
    • 4 eggs
    • 3/4 teaspoon salt
    • 1/2 teaspoon pepper


    Instructions


    1. Saute broccoli with butter or margerine until tender.

    2. Place broccoli in pastry shell, sprinkle with parsley.
    3. In a bowl, mix eggs, half and half, salt and pepper.
    4. Add Swiss cheese, blend well.
    5. Pour over broccoli.
    6. Sprinkle top with Parmesan and bread crumbs.
    7. Bake at 400 degrees for 40-50 minutes. Let stand 10 minutes before serving.
