Roasted Vegetable Pasta

Recipe Introduction
This is probably our favorite pasta dish, if we had to narrow it down. Very easy.
List of Ingredients
- 2 pounds leeks with 2 inches greeen, quartered and washed
- 1/4 cup olive oil
- 1/4 cup chicken broth
- 2 t. dried thyme
- 2 teaspoons salt
- pepper to taste
- 6 ripe plum tomatoes, quartered
- 2 yellow squash, sliced 1/4 inch thick ~ or zuchinni
- 1/2 cup pitted black olives, any type you like
- 1/3 cup chopped parsley, we use the Italian flat leaf variety
- 1 pound pasta
Instructions
- Preheat the oven to 400 degrees.
- Place the leeks in a shallow pan, drizzle with the olive oil, chicken broth, thyme,salt, and pepper.
- Cover with foil and bake for 30 minutes.
- Remove the foil, add all remaining ingredients except parsley and pasta.
- Bake uncovered for 45 minutes at 325 degrees.
- Toss with parsley.
- Serve over pasta. We use linguini.
