    Recipe Introduction


    This is probably our favorite pasta dish, if we had to narrow it down. Very easy.


    List of Ingredients


    • 2 pounds leeks with 2 inches greeen, quartered and washed
    • 1/4 cup olive oil
    • 1/4 cup chicken broth
    • 2 t. dried thyme
    • 2 teaspoons salt
    • pepper to taste
    • 6 ripe plum tomatoes, quartered
    • 2 yellow squash, sliced 1/4 inch thick ~ or zuchinni
    • 1/2 cup pitted black olives, any type you like
    • 1/3 cup chopped parsley, we use the Italian flat leaf variety
    • 1 pound pasta


    Instructions


    1. Preheat the oven to 400 degrees.
    2. Place the leeks in a shallow pan, drizzle with the olive oil, chicken broth, thyme,salt, and pepper.
    3. Cover with foil and bake for 30 minutes.
    4. Remove the foil, add all remaining ingredients except parsley and pasta.
    5. Bake uncovered for 45 minutes at 325 degrees.
    6. Toss with parsley.
    7. Serve over pasta. We use linguini.
