    Sweet Dills

    This is one of the easiest pickles I know of, great for beginners.Can't tell you specific amounts of vegetables, you have to pick or purchase what you think you'll use.


    List of Ingredients


    • sliced cucumbers
    • chopped red and green peppers
    • garlic, peeled but left whole
    • fresh dill heads, one for pint jar or two for a quart jar
    • sliced onions
    • 1 quart vinegar
    • 1 quart water
    • 1 cup sugar
    • 1/3 cup salt


    Instructions


    1. Pack 6 quart jars with vegetables.Pack firmly.
    2. In large pan, heat the vinegar, water, sugar and salt until the sugar and salt are dissolved.
    3. Pour the syrup over the vegetables, screw on clean lids and screw tops.
    4. Process for 30 minutes in hot water canner.
    5. Allow to mature for a few weeks before opening.


    Final Comments


    For 6 quarts, it takes one and a half recipes of the syrup, I often have a little left over. You can make a batch of quick to eat refrigerator pickles with it and some left over vegetables.
