Virginia Slicers
This is another good pickle, but a bit more work and time is involved.
List of Ingredients
- 1 gallon of sliced pickles
- 1 gallon water
- 1 cup Kosher salt
- 1 tablespoon powdered alum
- 1 tablespoon powdered ginger
- 6 cups sugar
- 4 cups cider vinegar
- 2 cups more water
- 1 tablespoon celery seed
- 1 tablespoon more Kosher salt
- 3 sticks cinnamon
- 1/2 teaspoon mustard seed
- 1 tablespoon whole cloves
- 1 tablespoon chopped ginger or 2 teaspoons ground
- 1 tablespoon coriander seed
Instructions
- Soak the sliced pickles in brine of the one gallon water and one cup meat salt for six days.
- On the evening of the sixth day drain and rinse. Add the alum, water to cover and soak overnight. Then drain and rinse.
- Boil for 10 minutes in water to cover and the powdered ginger.
- Drain and rinse again.
- Then make syrup of sugar, vinegar, 6 cups water, celery seed, salt, cinnamon sticks broken, mustard seed, cloves, whole or powdered ginger and coriander seed. Let come to a boil and add sliced cucumbers and boil for five to ten minutes. Can and seal.
