    When green tomatoes aren't available, we use tomatillos.

    Serves 6


    List of Ingredients


    • 3 whole chicken breasts, boned, skinned, and cut into 1/2 inch cubes.
    • 1 1/2 cups (or as needed) flour
    • 1/4 cup vegetable oil
    • 2 tablespoons vegetable oil (separate)
    • 5 large green tomatoes, diced
    • 1 large onion, diced
    • 1/2 cup apple cider
    • 2 tablespoons curry powder
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon ground coriander
    • Dash cayenne powder
    • 1 cup half and half
    • salt to taste
    • Cooked rice


    Instructions


    1. Dredge the chicken with the flour. In a large skillet, heat the 1/4 cup oil and brown the chicken for 10 minutes. Remove the chicken from the skillet. Drain off the fat. Add the 2 tablespoons oil to the skillet and saute the vegetables for 10 minutes.
    2. Mix the cider, curry powder, cumin, coriander, and cayennne powder,add to the vegetables.
    3. Add the reserved chicken, half and half, and salt.
    4. Simmer for 10 minutes to let the flavors mingle.
    5. Serve over the rice.
