Green Tomato Curried Chicken

When green tomatoes aren't available, we use tomatillos.
Serves 6
List of Ingredients
- 3 whole chicken breasts, boned, skinned, and cut into 1/2 inch cubes.
- 1 1/2 cups (or as needed) flour
- 1/4 cup vegetable oil
- 2 tablespoons vegetable oil (separate)
- 5 large green tomatoes, diced
- 1 large onion, diced
- 1/2 cup apple cider
- 2 tablespoons curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Dash cayenne powder
- 1 cup half and half
- salt to taste
- Cooked rice
Instructions
- Dredge the chicken with the flour. In a large skillet, heat the 1/4 cup oil and brown the chicken for 10 minutes. Remove the chicken from the skillet. Drain off the fat. Add the 2 tablespoons oil to the skillet and saute the vegetables for 10 minutes.
- Mix the cider, curry powder, cumin, coriander, and cayennne powder,add to the vegetables.
- Add the reserved chicken, half and half, and salt.
- Simmer for 10 minutes to let the flavors mingle.
- Serve over the rice.
