    This is a great buffet salad, or you can cut the recipe in half easily for a family meal.Make the same amout of dressing,though, you can use it on another salad later.


    List of Ingredients


    • 1 pound shrimp, peeled and deveined
    • 1 pound scallops
    • 2 pounds cheese tortellini
    • #1 1/2 cup olive oil
    • #2 1/2 cup fresh lemon juice
    • #3 1 cup fresh basil leaves
    • #4 1 garlic clove, minced (we use two or three)
    • #5 1/2 cup grated parmesan
    • #6 Pepper to taste


    Instructions


    1. Boil or simmer the shrimp and scallops for 3-4 minutes, until just cooked.Drain and cool.
    2. Cook tortellini al dente (but cooked), drain and cool.
    3. Combine #'s 1-6 in a blender.
    4. Toss all the ingredients together.
    5. Garnish with fresh basil leaves.
