Seafood Pasta Salad

This is a great buffet salad, or you can cut the recipe in half easily for a family meal.Make the same amout of dressing,though, you can use it on another salad later.
List of Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 2 pounds cheese tortellini
- #1 1/2 cup olive oil
- #2 1/2 cup fresh lemon juice
- #3 1 cup fresh basil leaves
- #4 1 garlic clove, minced (we use two or three)
- #5 1/2 cup grated parmesan
- #6 Pepper to taste
Instructions
- Boil or simmer the shrimp and scallops for 3-4 minutes, until just cooked.Drain and cool.
- Cook tortellini al dente (but cooked), drain and cool.
- Combine #'s 1-6 in a blender.
- Toss all the ingredients together.
- Garnish with fresh basil leaves.
