    Spinach and Bulgur Salad

    Recipe Introduction


    This is one of my favorite summer lunch salads. Does well as a buffet dish also.


    List of Ingredients


    • 1/2 cup bulgur
    • 1/2 cup boiling water
    • 1 cup plain yougurt
    • 1/4 cup olive oil
    • 2 tablespoons red wine vinegar
    • 2 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 8 cups fresh spinach, torn into bite size pieces ~ we use a bag of the prewashed
    • 1/2 large red onion, sliced
    • 1/2 cup sliced black olives
    • 1/4 cp freshly grated Parmesan


    Instructions


    1. Combine bulgur and boiling water in a small bowl.
    2. Let stand until bulgur has absorbed water, about 10 minutes. Cool bulgur completely.
    3. For the dressing, stir yogurt and next 4 ingredients in another small bowl. Season to taste with salt and pepper.
    4. Place spinach, onion, olives, Parmesan and bulgur in a large bowl. Add enough dressing to season to taste.
    5. Toss well. Serves 3-4.
