Spinach and Bulgur Salad

This is one of my favorite summer lunch salads. Does well as a buffet dish also.
List of Ingredients
- 1/2 cup bulgur
- 1/2 cup boiling water
- 1 cup plain yougurt
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 8 cups fresh spinach, torn into bite size pieces ~ we use a bag of the prewashed
- 1/2 large red onion, sliced
- 1/2 cup sliced black olives
- 1/4 cp freshly grated Parmesan
Instructions
- Combine bulgur and boiling water in a small bowl.
- Let stand until bulgur has absorbed water, about 10 minutes. Cool bulgur completely.
- For the dressing, stir yogurt and next 4 ingredients in another small bowl. Season to taste with salt and pepper.
- Place spinach, onion, olives, Parmesan and bulgur in a large bowl. Add enough dressing to season to taste.
- Toss well. Serves 3-4.
