    Recipe Introduction


    This sauce is great on pasta, or in the recipes"Grilled Scallops with Spinach 'Pesto' Sauce" under Fish or "Chesse Bread with Spinach 'Pesto' Sauce" under Breads.


    List of Ingredients


    • 1 cup chopped yellow onion
    • 1/2 cup olive oil, divided
    • 3 cloves garlic, peeled and minced
    • 3 cups fresh spinach leaves, firmly packed
    • 2 teaspoons dried basil or 2 tablespoons fresh
    • 1/2 teaspoon salt, optional
    • 1/4 cup freshly grated Parmesan


    Instructions


    1. Saute onion and garlic in about 4 tablespoons of olive oil until onion is soft and transparent; remove from heat and cool slightly.
    2. Spoon onion and oil mixture into blender or food processor. Add spinach, basil and salt. Process until mixture is finely chopped.
    3. With motor running, pour in remaining 1/4 cup olive oil in slow but steady stream.
    4. Blend to coarse puree, then stoop motor, add cheese and process just a moment.
    5. Makes 1 1/4 cups sauce.
