San Antonio Squash
List of Ingredients
- 4 cups summer squash, cut 1/4 inch thick
- 2 tablespoons butter
- 1 tablespooon oil
- 1 medium onion, chopped
- 2 cloves minced garlic
- 3 tablespoons flour
- 1 1/2 cups warm milk
- 1 cup grated cheddar or Monterey Jack cheese
- 1 to 3 chopped jalapeno peppers, or to taste
Instructions
- Preheat oven to 350 degrees.
- Butter 8 inch casserole.
- Steam squash until slightly tender, drain and spread in casserole, add jalapenos.
- Cook onion and garlic in butter and oil, add flour and let cook a few minutes until flour taste gone.
- Add warm milk, stir until thickened.
- Add cheese.
- Bake uncovered for 20 minutes.
Final Comments
We use Anahiem chilis in this, and serve it with a roasted chicken.
